So I've been takin my OG after the boil after the wort has cooled and I'm pouring the wort into my Carboy before pitching the yeast. First question should I put in half my extract and then the other half after the boil and let that stand 10 min to pasteurize. Second if I do that do I take a sample out before I add the rest of the extract cool that down and then take a hydro reading?
 
In my experiences, all extract additions should be completed before the last 15min. of the boil. ie. if you're doing a late extract addition, do it at the last 15min. of the boil.
Also, your OG reading must account for ALL ingredients in the recipe. You cannot take a reading, then add more extract: this will change the gravity of the wort because you're introducing more sugars into the mix. Take your OG reading after you've cooled the wort and before pitching your yeast.
 
I agree but then I wonder if I am accounting for not adding the extra water to bring the volume up to 5 gallons. Do you use a 5 gal Carboy or a 6
