I'm planning to brew a Thai Witbier next week for my second brew ever. The recipe calls for regular pilsner malt (see below). However, the store I'll be buying from is offering "Weyermann Extra Pale Premium Pilsner Malt" for cheaper price than the regular Pilsner malt., and looking at Weyermann's Aroma Wheel, higher "Sweet" Taste profile for the latter sounds enticing.

My question is: what difference should I expect to the final product if I completely switch the regular Pilsner Malt to the "Extra Pale Premium Pilsner Malt"? Is it advisable to switch it or should I just stick with the recipe?

Thai Witbier Recipe:
  • 4 lbs. Weyermann Pilsner
  • 4 lbs. Wheat malt
  • 1/2oz. Sorachi Ace @ 60 min.
  • 1/2oz. Sorachi Ace @ 15 min.
Yeast: Safale US-05
Additions: Ginger, Lemongrass, Kaffir Lime Leaves

Thanks!

I doubt you'll notice any difference in flavor. Color will be a touch lighter. Use the extra pale, your beer will be fine.
100% agreed. I can tell zero difference at all in flavor between regular Pilsner malt and extra pale by the same maltster (for example, Weyermann). But there is a noticeable color difference if both beers are 100% Pilsner (but it's only noticeable if it's 100% or very close to it since it's a color difference of like 0.2 to 0.5 Lovibond, so adding anything darker would make it completely unnoticeable).
