I posted a thread last week that was a slight concern. I am on my 6th batch of beer and in every case after I bottle, I drink one beer every week t document the changes in color, taste, etc. I need this information so I understand my beer from start to finish.

Anyway, I complained about my 6th beer because it was the first beer that was extremely sweet after week one. I was concerned I did something wrong maybe leaving unfermentable sugars in there or whatever.

Happy to say that after week 2, the sweet taste has gone away so it looks like I have a winner of a beer here.

Normally, I would say to stay away for at least a month, but I like your method of monitoring the process - more people should care as much.

As far as the sweetness, remember there are many things that can affect the rate of carbonation/refermentation in the bottle - ABV of beer at bottling, type and quantity of sugar used, yeast strain, conditioning temperature held, possibly even grain bill composition(??? idk, just through that in). I would encourage you to take all of these things in consideration when evaluating the conditioning period. It sounds like your off to a great start though!

did the sweetness taste kind of like butterscotch? If so, than it was probably just some diacetyl that the yeast cleaned up after the first week in bottle. All my bottle conditioned beers go through a diacetyl phase.
 
The sweet taste tasted like alot of sugar pretty much as if I added 3 or four tablespoons to my beer. I need to drink my beer every week because personally I am detailed in my documentation process and to better understand my beer is to understand it from every step. The sweet taste freaked me out a bit because it was the first time I experienced this after week 1. I am learning though and I am excited because I know if nothing else I am getting great data for my craft so it helps.
