At a recent trip to Chattanooga, I visited Big River Brewing, where I sampled their Sweet Magnolia Brown Ale. It's one of the best browns I've ever had, so naturally, I must clone it.
Here's the description from their web site (they wouldn't give me the actual recipe - I asked) :
British Crystal and Chocolate malts give this ale a medium body and rich, sweet aroma. Mount Hood hops add a spicy and floral nose. This smooth, malty brew was a Gold Medal winner in the American Brown Ale category at the 1998 Great
American Beer Festival.
Original gravity: 12.5° Plato
Alcohol by volume: 5.2%
Bitterness Units: 24
I'm going to do a few 2.5G BIAB batches to try different combinations before scaling up to a 10G batch. Here's my initial stab:
Batch size: 2.5G
1.052 OG, 28.6 IBU, 25.8 SRM, 1.011 FG
65% eff
4.5# US 2 row
8 oz Carastan (35 SRM)
6 oz Fawcett Pale Chocolate (215 SRM)
3 oz Chocolate Malt (450 SRM)
.5 oz Mt Hood (60)
.5 oz Mt Hood (1)
1 oz Mt Hood (dry hop - 5 days)
US-05
Mash @ 152
Comments, suggestions?
Given that the description mentions British crystal and chocolate, I think the carastan and fawcett and right for this brew; I'm just not sure about the amounts.
Thanks in advance,
