If you had a Cynic Ale by Surly I am sure you did like the peach/apricot & honey aroma it got. the can, yes, they only sell cans it states

It's a really good beer. Assuming the statement is correct and the flavor is coming not for yeast but from hops I am on my way to find what kind of hops they used.

While at it what yeast is that ? It's not peppery as 3711 it's more subdue.

And I'd bet its WLP550. I think Surly only uses a few yeasts. WLP007, WLP550, a lager of some kind, and Brett.
As for the hops? Not a clue. I think they do contribute to the floral character some, in combination with the Belgian yeast.

I love Cynic. I think a clone effort is in order..
 
Their website liss the hops as Colombus and Slovenian Styrian Goldings. Yeast is listed as Belgian Ale (would tend to agree with WLP550 reco).

If you go to Northern Brewers link below (and click Additional Information), you will see the recipe for their All Grain Cynic clone. I think they worked with the brewery on the kit, although I doubt Surly gave them something that was spot on. You might have to tweak it in a few areas. Their kit gives the hop schedule of those same 2 hops. Lists WY3522 Belgian Ardennes as the yeast to use. Cheers!

I just ran across that kit myself. I forgot all about the fact NB had a clone. I think Surly is pretty good about giving out pretty close clones. The difference in the end result is probably more brewing technique than ingredients I'd bet.

I know the SWMBO would love a keg of Cynic.. Going to have to get after this.
 
I've bought the NB kit a couple of times, and have adapted the recipe and bought ingredients elsewhere. I've brewed this beer a number of times - have one on tap right now as a matter of fact.

It's got to be my favorite - at the moment anyway.

So does it have the honey and peach notes when you made it from the kit ?

In the past I used both ardennes and goldings and I don't remember getting those notes. I can't imagine the cynic ale is aged. Usually you get special notes when you age the Belgian 3+ months.

Thanks for input. I will use some notes from the kit to see if I can get those flavors out.
