You can, but you'll most likely want to add in supplements such as gypsum when brewing. RO water will lack minerals that are quite useful for healthy yeast. OTOH, you can make fabulous coffee just like it is...
 
Are you doing AG? If so, you might be ok. Trying to use RO water with extracts means very slow ferments. Think of it this way, you use RO water in your reef tank to keep the algae and scum growth down, but yeasts are scum (or at least fungus). Mineral supplements would be a very good idea.
 
Right now I am doing all Extract brewing right now.....I'll look into suppliments though.
