Is this safe to brew with? I heard the plastic and rubber seal on this can leach chemicals in my Kombucha...

Also. I ordered a gallon food-grade fermenting jar from Amazon just in case. Would it be alright if my kombucha with SCOBY sets in this jar for a week?

I wouldn't ever brew in plastic, the kombucha shouldn't be touching the plastic for any extended period of time. Glass is always the safest material for a brew vessel. To store a Scoby for a bit while you're waiting for the right equipment it'll probably be fine.
 
Is that a glass jar with some plastic and rubber? Or is the jar plastic?
 
I would expect that it's OK to sit for a week. I even think it would probably be fine to use regularly. I haven't seen anything definitive about plastic and kombucha, although a lot of people say the acid is bad for it.

The acidity of wine is not much different than kombucha, and people use plastic buckets for wine. If it is food safe plastic and says BPA-free, then I would feel fine with it, especially in the short term, possibly longer.
 
I just got my 1 gal. ferment jar. it has a cork in the bottom. is cork safe to be down at the bottom of the jar during 1st ferment? I wouldn't see why not.
 
I would think cork would be ok, but not sure how well it will hold up over time.
