I was wondering what priming sugar I should use for my Pumpkin Ale. I don't want the carbonation too "fizzy" if that makes sense but now pure foam either. Any suggestions on what kind and how much?
I think maple syrup is good in many beer styles, but especially fall beers. Adds a very subtle "minerally" character. 3.5 oz for 5 gal would be barleywine, porter and stout CO2 levels. http://www.northernbrewer.com/priming-sugar-calculator/
I've always used corn sugar on all my bottled beers. Are you looking to carb or to add flavor as well? Corn is neutral. It adds no flavor I have discerned
also, keep in mind that not ALL the stuff in your fermentor will make it into the bottling bucket. Usually for me, I lose about 1/2gal to trub going from fermentor to bottling bucket (5-6gal batch) so I subtract 1/2gal from my carb calcs
