It will work, but is harder to deal with than granulated. Whatever you chose to prime with, you should weigh the amounts for better accuracy than measuring volume.

I think confectioner’s sugar contains adjuncts to prevent clumping, like cornstarch or silicates. I’m sure it would carb beer, but might add more sludge to the bottles (“sludge” is like a scientific term, right?).
