Sugar Question?

Hi Everyone! I'm new to making cider but have been reading the forums for 2 weeks now. Boy do I have a brain cramp.

Anyway, my question is about sugar. Can you add it right out of the package or do you have to mix it with water and heat it to kill bacteria. :confused: I have read conflicting information about this and really want to do it the correct way. I have never thought about sugar have bacteria in it.

I've never heated it to 165 deg. I heated some juice, just a little, to help it dissolve. I usually add Camden and wait 24 hrs to pitch yeast. This slows down anything wild and give the pitch a head start.
 
I've always just poured sugar right from the pkg, but then I sulfite the must, so I don't have to worry about anything hitching a ride in the sugar or the pkg.

Thanks guys but I will be using store bought pasteurized juice and won't be using campden/sulfites. I want to add sugar at the beginning. So is it just ok to just dump it in? Someone on another forum said you have to heat the sugar to kill bacteria in it. Why would sugar have bacteria in it?:confused:

A couple of other members also made fun of me on that forum so I really didn't want to ask anymore questions.:(

Just dump it in.

If you're using pasteurized juice no need for sulfites but they won't do any harm of course. A reasonable extra precaution.

@Edwort 's Apfelwein is a popular recipe with about a bazillion views and links. really simple and involves juice, sugar and a dry yeast. Simple and tasty.

Have no fear, dump it in.

BTW, I think your question is perfectly reasonable and well thought out. It's good to be concerned about potential contamination vectors.
