2 days into pitching my yeast fermentation was going nuts and day 3 was slow and a week into it there's nothing at all going on and my gravity is at 1.030
 
Are you using a refractometer or hydrometer for SG readings? A refractometer will give a false reading when there is alcohol in the sample.
 
If you can see into the fermenter look for bubbles coming to the surface, even very slowly, they indicate ongoing fermentation. Your beer will clear before it is done, so you can just wait for that. If you can't see in don't trust thenairlock. Just wait two weeks from pitch then bottle. Don't bother taking readings, just another way to disturb the brew.
