I recently brewed a IIPA:
SG = 1.099
FG reading 1.071
Grain bill
29 lbs of Pale malt 2 row
6 lbs of Vienna Malt
1 lbs of Honey malt
3 lbs of DME
1 Cara-pils
5 lbs of honey
Yeast Nutrient
PH 5.2 Stabilizer
Yeast California ALE WLP001
Step starter from 2000 liters to 5000 Liters, two weeks of building, but I left it in the refrigerator for 4 mores weeks without feeding them.
I pitched at 68, then put in Ferm chamber at temperature range of 64/65 degrees for 2 weeks. I took a reading last night and it was 1.071, then took a brix reading and it said 1.090 (which can't be true), because fermentation took place over 3 days and evidences is in blow off hose.
I tasted a sample last night, which was good, but very sweet. Last night, I re-pitched 2 packets Chico and moved the carboy out of the Ferm chamber to see if that would get things moving, however, I saw no activity this morning (which could be premature to hope it would work).
Do you think it needs more time to Ferment and will the 2 packets of chico do anything? Should I raise the temperate to get the yeast to start again? What can I do at this point?
