OK, I am looking to make a dry stout, with strong roasted character. I made a stout before, and it ended up with too sweet, and very little on the roasted side. I have come up the recipe below. I have a few question about this:

Do the roasted barley and black patent look about right for a stout with a strong roasted character? Is it too much, or should I go with more?

Should I even bother with the CaraPils?

As for hops ... there is only the bittering addition. Would it be ok to just use a high alpha hop like columbus, or just use more of a lower alpha hop?

looks roasty. One question though - why bother with the .25 lbs of black with all that roasted barley? not sure you'll be able to tell the difference if it's in there or not.

For the hops - I would opt for more of a lower alpha hop with just the 60 minute addition - you'll get some flavor carryover from it, which I personally like

never used the Carapils, so can't help you there
 
grind the roasted barley to a powder
in a coffee grinder for a more roasted charecter
 
yeah dont worry about the carapils or patent. what you want falls in to the American Stout category methinks.
