OK, I am looking to make a dry stout, with strong roasted character. I made a stout before, and it ended up with too sweet, and very little on the roasted side. I have come up the recipe below. I have a few question about this:
Do the roasted barley and black patent look about right for a stout with a strong roasted character? Is it too much, or should I go with more?
Should I even bother with the CaraPils?
As for hops ... there is only the bittering addition. Would it be ok to just use a high alpha hop like columbus, or just use more of a lower alpha hop?
