I have brewed about 12 batches of beer and they all have the same strong after taste. I switched from dry yeast to a wet pack on the last two batches I brewed but it still has the same bite at the end. Any idea what could cause this?
 
By strong bite I'm assuming you mean an alcoholic taste.
Do you have fermentation temperature control? If you don't, I'd bet $100 it's that
 
How long has it been in the bottle? After a couple weeks I take bottle, it is fine, 3 or 4 weeks it gets a little something, and after that it mellows out, I just assume it is the different parts of the beer aging at different rates and then all becomes good :ban:
 
Yes, what temp are you fermenting at and what yeast are you using with these batches? You can produce different alcohols fermenting at different temps which can cause off flavors or a harsh alcohol bite.
