I have a strawberry mead that I am letting it reach room temp. before I pitch the yeast, I'm just using bakers yeast since I also started a JAOM the same time. It wasn't a lot of strawberries I used about 1 box from local mart, approx 1 lb. 3.5 lbs of honey and purified water, and I squeezed 1 hole orange's juice into the mix. Should I add yeast energizer when I pitch the yeast?
 
You may find yourself needing more strawberries. A couple more pounds would work well, maybe add them to the secondary to preserve some aromas from blowing off during a vigorous primary.
 
I know I am low on strawberries, but I'm jut making a cheap batch, I may add some to the secondary, but idk. What about the yeast energizer?
 
add half when you pitch, and the other half at the 1/3 sugar break. If you don't have a hydrometer, after a few days of good hydration. You can also do, 1/3 at pitch, 1/3 at first sign of fermentation, and the last third at the 1/3 sugar break.
 
Guessing you're form Georgia, Do you have Pick your own strawberry places? They should be in season just now. Getting them fresh from the farm is always great. And probably cheaper than the grocery store.
 
When it starts fermenting is it ok to leave the airloc off it is bubbling up and will clog the lock? If so how Long is it ok for?
