I was thinking about buying a 500g package of wine yeast, my only concern is whether or not there is any special concerns about storing it. Can I just get out the yeast I need for that batch, and then roll up the bag and place it back in the fridge? Or is there something else that I need to do?
 
Put it inside an air-tight bag and use a desiccant to absorb moisture.
Also reconsider buying it in bulk if it's available in smaller quantities. Yeast is so inexpensive relative to the other ingredients it's not worth risking a batch.
