Just wanted to register my thanks for the thread above and the recipe therein; a buddy and I made a partial mash Stone IPA clone pitched with a WLP550 tube about 2 months ago. I've got just a few bombers left and each has been better than the last. Great recipe, and I'm considering doing it again, only this time AG & playing with the yeast & adjuncts. Thinking of trying the Wyeast Belgian Strong and maybe a couple of pounds of honey--any thoughts? The partial mash C-B turned out fairly dry, with a lot of nice citrus notes and a long bitter finish--all of which I liked. I wouldn't mind upping the sweetness a bit on the front end, though, and balancing the backend bitterness some. What do you guys think?
