Why not try? You can use keep your normal scoby for your regular tea and when it doubles, use the new one to try and ferment the new, flavored tea.
 
Stevia is not a fermentable sugar so your scoby won't process it. Also, it is mostly made in huge factories in China so I would stay away from it, personally.
 
Stevia is a plant and if the tea is organic, it should be fine. The stevia extract may be produced somewhere other then the US, but I wouldn't worry about it that much as its a natural sweetener.
