I had a quick question. When stepping up a starter does it matter what kind of DME you use to step up with? Or do you have to use a DME thats similar to the beer you are gonna put it in? I have wheat malt extact on hand but if i can use that it will be a little cheaper than buying a different DME.

go ahead and use the wheat dme. You're shooting for a gravity around 1.040 for the starter. Make up 500mL, pitch your yeast, let it grown, step it up again with another 500mL, pitch at high kraeusen into your fermenter.

Agreed, you're not using a ton of DME for your starter, so that little bit isn't gonna make a difference in your beer overall.
