You might be able to simplify and make your design more efficient by going more to a rims design than a herms. You can make more use of the energy of steam by directly injecting it into the recirculating mash than by using it to heat the outside of a copper coil.
If you want to stay with herms, I'd immerse the herms coil in water and inject the steam into that. Water will make a much better transfer medium than air.
