So after having a read of various articles I saved some wort from my last brew, diluted it to 1.028 and threw in some flowers from a blossom tree in the back garden into a sealed jar with an airlock. For 3 days, nothing, then bubbling, cloudiness and lots of activity. My question is, how likely am I to get something I can use to produce decent tasting beer and in what time frame? I realise its a bit of a "how long is a piece of string" question but what's peoples experience?
 
When catching wild yeasts and bugs i normally get 70% dumpers that i never even taste, 25% are pitched in new wort and maybe 5% are usable.
 
I had a sniff of it yesterday and it was like honey and orange, not sure if that's good, it was nice.
 
That sounds good, swirl it up and pitch it in some fresh wort.
 
I'm thinking I'm going to give it another week, cold crash then step up into a 3 pint starter. Then maybe brew a really straightforward ale recipe to see what this yeast is all about, maybe just a 4 gallon batch, possibly a wheat beer? Any thoughts/advice?
