Starting next batch when first one is finished?

I've never brewed booch before. My thought would be to have two one-gallon jars. I'd get one batch started and when that one is finished I'd get the tea ready and cooled in the second jar. When I took the scoby out of the first batch I'd put some of the new booch into the newly brewed and cooled tea, put the scoby on top of that tea and cover it for the second batch.

Does that sound like a good process?

Also, I should get my hands wet with white vinegar before removing the scoby from a booch batch, right?
 
- Mature your first batch to at least 3.5pH.
- Save 20% as a starter.
- Brew a concentrate with tea, water, sugar and a little salt equalling 20% of your 2nd batch.
- Add 60% cool water.
- Add the starter from the first batch.
- THROW AWAY THE PELLICLE FROM THE FIRST BATCH.
- Cover and place in a dark location, with consistent temperature. 68 is OK.
- Harvest in appx 2 weeks when pH reaches at least 3.5. (I aim for 3.1 to 3.2)

...the cycle continues.
