Hey Guys - I just finished bottling up the remainder of the keg of this Saison and thought I should post the recipe. This one turned out amazing, a perfect summer time tipper. The flavors were all very well balanced, a great clean slightly sweet, lightly spiced finish with hints of fruit most noticeably watermelon. I did the 75min boil cause my boil was a bit weak in the beginning. If you go with a 60 you may have a bit more bite from the Mt.Hoods...but that will be fine. I couldn't get my pitching temp down to the 70.0 F I wanted but still got some nice esters. If you have the means get that temp down there and let it come up to the 76-78 range...I would give it a shot. Either way it'll be great.
