I've had some funky looking fermentations in a few of my recent batches. Near the end of fermentation some sponge-like formations have developed at the top of the beer. It's happened with different yeasts (1056 and trappist) and different beer styles. They fall out after crash cooling and I haven't noticed any off flavors or infections but I've never seen this before and just has me a little confused.
Any thoughts?
