Splitting yeast for small batches

I want to start brewing some one gallon batches, but I'm wonder what my best yeast option is. Would it be okay to open a packet of US-05, use a portion of it, and then throw the rest in a ziplock to use later?

Yes. I would portion it by weight on an accurate balance. I would also err on the higher side.
