I've heard from various sources that splashing your wort in the brewpot while it's hot is a sure-fire way of oxidizing it. Is this true? If so, could somebody explain the chemistry behind it? Why is it all right to splash when it's cool but not when it's hot?

It is called hot side aeration.

Mr. Wizard can answer this: BYO - Hot-Side Aeration & Storing Hops: Mr. Wizard

As for splashing in the context of homebrewing... Don't worry about it. It really isn'a a huge concern at the levels we brew at.

Just to add in my $.02 here:

When lautering, I fill a bucket with several gallons of hot wort, pick it up, and dump it into my keg boiler. There's a lot of splashing involved, and I've had no problems with oxidation, even after months of storage.
