(for bread machine)
2 tablespoons of Special-B
2 tablespoons of liquid malt extract
1 1/3 cup of lukewarm water
2 tbsp of sugar
4 cups (minus 2 tablespoons) bread flour *
1 tsp of salt
2 tsp of baker's yeast
1 tablespoon of vegetable oil
* I put the special B flour into the measuring cup, and fill to the 1 cup line with bread flour, for the first cup. You want a total of 4 cups of flour, combined.
Grind the Special-B into a coarse flour using a coffee mill (pulse it, to prevent overheating it)
Put the water in the bread pan, add the malt extract (you may need to zap it in the microwave to thin it up) and stir until mostly dissolved.
Add the salt, the sugar, the vegetable oil, and stir a bit.
Add the flour + ground up special B on top of the liquid - do not stir.
Make a small indentation in the top of the flour, and scoop the 2 tsp of yeast onto the flour.
I use the French Bread setting on my machine, for a 2 pound loaf, with medium crust color.
This is very tasty bread!
