Sour recipe suggestion, maple, vanilla, lactose...?

Thinking another sour for my next batch (I love 'em, and the two sours I've done so far both rocked!).

I have some lactose powder, natural maple extract, and natural vanilla extract... would some sort of dessert/pastry sour make sense at all...?

Previous sours were a passion fruit, and a lime & jalapeno gose...

I've been thinking about chucking some lactose into one of mine (along with fruit). Let us know how it turns out if you try it!

The passion fruit sour I made was amazing, and having had some creamier sours am curious too.
