Batch #11 was an all-grain sweet stout. OG 1.058 FG 1.028

I added 1lb of lactose with 10 minutes left in the boil. Flavors are good EXCEPT for the sour milk at the end. Is sour milk normal lactose flavor? Everything seemed normal during brewing process and fermentation. What else could cause sour milk flavor?

i would think the sourness would be caused by lactic or acetic bacteria. that 1.028 seems like a high FG also... is it carbed up an everything or is it still fermenting? any signs of infection?

Everything seems great. No bottle bombs, not even excessive foaming, but good head and carbonation. No scum during fermentation, 4 days active, 13 days in primary w/ no secondary. I mashed at 157 deg F, trying for a high FG. Dead on sour milk though.

I'm still going to drink it, as it's quite delicious save for the sour milk thing that comes in at the end of the swallow. I'll just call it a sour sweet stout!
