Looking for some help in making a sour blonde barleywine. Real Ale here in TX does one that is awesome and I would like to replicate it. I found this recipe from brewtoad and wanted to get your take. I dont want it to be overly malty sweet like some of the previous barleywines that I have done.

5 gallon batch at est. OG 1095

7 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 1 35.9 %
5 lbs Pilsner (2 Row) UK (1.0 SRM) Grain 2 25.6 %
4 lbs White Wheat Malt (2.4 SRM) Grain 3 20.5 %
2 lbs Cara-Pils/Dextrine (2.0 SRM) Grain 4 10.3 %
1 lbs Carafoam (2.0 SRM) Grain 5 5.1 %
8.0 oz Sugar, Table (Sucrose) (1.0 SRM) Sugar 6 2.6 %

1.00 oz Magnum [12.00 %] - Boil 60.0 min Hop 7 29.3 IBUs
1.00 oz Citra [12.00 %] - Boil 15.0 min Hop 8 14.5 IBUs
1.00 oz Cascade [5.50 %] - Boil 10.0 min Hop 9 4.9 IBUs

WL California Ale in the primary
ECY20 Bugfarm in the secondary

Will put oak chips or spiral at some point.
