Hi all,
I bottled my first batch of kombucha on Friday. I decided to do a second step ferment, adding some juice and letting it sit on the counter for 2 days to carbonate it a bit more. I put this jar in the fridge today, and opened it to find something growing on it! Is it mould? Is it safe to drink? What is growing?

That is a mother, the same kind of cellulose layer that forms on your main ferment. The dark patch in lower left is a cluster of yeast that formed before the cellulose took over the surface.

Looks unsightly, but perfectly safe in my opinion.
