If soft white wheat is the same thing as raw wheat (I suspect it is) I would definitely make witbier! For a 5gallon batch, 50/50 wheat and either 2-row or pils (shoot for 1.045ish), and then noble hops (bittering only) to get to ~10-15 IBU. Add 1oz crushed coriander and 1oz bitter orange peel (dried) in the last 5-10m of the boil.
