Let's say that I have just finished carbonating my beer, So do I shut off CO2
bottle and turn it on again every time I want to enjoy a beer and turn it right back off again? Or cant I just set it at 10-12 psi let it carb up for 4 or 5 days and and leave the CO2 at 10-12 psi 24/7? Or will that over carbonate.

Open it all the way, but don't force it against the stop. This, of course, assumes you are certain there are no leaks.
