No, this isn't Boneyard material, I had 2 pork butts in my freezer for a while and I finally had some time to put then to use.
I rubbed one down to throw in the smoker tomorrow, for some pulled pork.
I've had the meat grinder and sausage stuffer attachments for our Kitchenaid mixer for a long time, but never used them. I cut the 2nd butt up and decided to make some bulk hot italian sausage, for the first time. Ended up with about 6 lbs of sausage, using kosher salt, fresh ground pepper, ground coriander, fennel seed, minced garlic, and crushed red pepper. I had to fry up a patty to try it when I finished. I'm pretty happy with the first test run. Tasty stuff!
