Can I replace the malted barley with malted corn in a simple single malt single hop ale or lager. And how would I go about roasting the malted corn to bring out different flavors.

You'd want to supplement some enzymes if 100% corn, I think people normally use a little malt because of the desired enzymes. I don't think it'll make good beer but Ive never tried it so ....

The distillers do it, search "100% corn beer" here and you'll come across a lot of notes.
