I have used flaked maize, and never loved the result. I was at a brewery yesterday, and they had a mex lager with "Soft malted Corn". I tried it and although it was on the sweet side, i quite liked it. In fairness, i had just had a pint of dark mild, so it may have been relatively sweet instead of just sweet.
I've ordered some malted corn to try out.
Has anyone brewed with both flaked maize and malted corn that can describe any differences?/Experience ?
