I'm looking to brew a smash beer tomorrow and I'm looking for suggestions. I have a vial of yeast bay's funktown that I'd like to use.
I like this to be a fairly light, highly hopped, crushable summer beer. I'd like to get some tropical and/or stone fruit notes out of this beer.
I have two malts from which to choose...Briess organic brewers malt at 1.8L and DP 140 or their Pilsen at 1.2L and DP 140.
I'm leaning towards the Pilsen, and maybe do a little caramelization of the first wort runnings. Thoughts?
For hops, I think I'm going to go with a relatively light early addition and lots of whirlpool and dry hops. I have a bunch of citra, Amarillo, galaxy and mosaic, I'd like to stick to one of those.
Anyone used this yeast that can comment on a good hop pairing?
Other comments/suggestions?
