so I brewed this weekend, and had some old wyeast (from march) and i used it for a batch i brewed this weekend. it wasn't showing any signs of activity last night, so i was a little worried i may have had some bum yeast. So i smacked a new packet last night with intentions of pitching this morning....i go down to pitch and there is a lot of activity...and its smelling fantastic!

so now i have this extra yeast packet...what can I do with it? its fully bulged and roaring...how long will it stay good like this? i have ingredients to brew another batch but i dont know when ill have the time.
 
Put it in a fridge and use in a future batch. Just make sure you use a starter.

I read this earlier this morning on the Wyeast site so I thought I would chime in:

7. I popped the inner nutrient pouch and the package swelled tight but I can’t use it right away. What do I do?

If you have activated a package but can’t use it right away, simply allow the package to swell and then refrigerate the package. The yeast will survive for extended periods if refrigerated. Before using, take the package out of the refrigerator and allow it to come up to room temperature before using. It is best to use the yeast as soon as possible.
