I brewed PG Saison back on11/19 and despite it happily gurgling along I racked it over to the secondary on the 24th. There may be a lesson here because since then there has been no visible signs of fermentation. OG was 1.076 and was fermenting in the primary at 70-72 deg. I have continued to maintain temp between 68 and 72 and last night I checked the SG and found it to be high for the elapsed time in the secondary, 1.026. I dont' think that I should bottle yet. I sampled my sample and it had a slight sweetness, mildly hopped with what I perceived as a sour note. I'm not well calibrated on the sour note however and although not identical to, I sensed a wee bit of that "band-aid" flavor that I have been exposed to in other homebrews. I used WLP565, Belgain Saison.
Any ideas on how to bring this brew to fruition?
