So I'm looking to brew an Imperial Stout. My first crack at this. Ive been playing with brun water and looking at my water adjustments which led me to needing to raise the ph quite a bit. Without adding 7 g baking soda and greatly increasing the sodium levels I thought id try to add some slaked lime to balance the levels. Ive never used this before so I thought I would tap on all the experience here. Looking for yout thoughts and suggestions.

I bought pickling lime from a local Latin grocery. They had a bag right with the dried herbs and chiles. It's used to treat corn to make masa. For brewing I weigh it out and dump it into the water as it is heating along with any other mineral additions. It appears to dissolve readily into the water. Easy peasy. Every dark beer I make I have to dilute my well water with some distilled and add pickling lime to get the numbers right in Bru'nwater. It has noticeably improved my dark beers.
