fill the siphon with sanitized water, cap the siphon tube with thumb, put racking cane in bucket above the vessel you're transferring to, lower the capped end into a mug next to said vessel, uncap, drain into mug until the beer starts coming out. there ya go, siphon started.

or get an auto siphon, they make it real easy.
 
Fill tube with sanitizer solution (whichever you use), connect one end to cane with finger over other end, briefly place other end in bowl set lower than fermenter, then move to container. This is a lot easier if using a tube clamp. Cheers :)
 
Ok great thanks guys I figured id ask for next time, this time I did it by mouth, then I read that it can be bad to do it that way. Hope I didn't ruin it, i did cut of the piece of tube I had in my mouth.

If you have Joy of Homebrewing sitting around (and you should if you're a beginning brewer, the cost is $ and the value is $$$$$) there is a treatise on siphoning in the back index. That said I really, really recommend an autosiphon.

I used my mouth for the first couple of batches and they turned out fine, well as fine as could be expected from following the instructions included in the kit. They would have been much better if I had known to ferment them cooler and longer. Now I put my fermenter in a 62 degree room after cooling to below 65 and leave it in the fermenter for 3 weeks before I bottle. Big improvement. :rockin::ban:
 
I close my hand like a fist. Put the tube in from the little finger end about halfway into the fist, and then suck from the other end of the fist. My hands have usually been sanitizer.

No contact with mouth. No filling the tube and getting sanitizer in the beer.
 
I got a ShureFlo diaphagm pump for Christmas. Racked 3 carboys of wine and kegged my Belgian Ale. I will NEVER siphon again!!!
