Posting this because I had received 2 oz of Crystal hops in the Wunder Hop pack from Austin Homebrew and have been on a mission to come up with a solid house pale ale recipe. In brulosophy's Crystal pale ale, their tasters noted citrus and floral notes which sounded like it would make a decent springtime beer however outside of that article I couldn't find much discussion about using Crystal hops in pale ales. Therefore I decided to grab another oz from my LHBS for dry hopping, use up some leftover LME I had sitting around, and try it for myself.
SH Crystal Pale Ale
2.5 Gallons
35 IBU
OG: 1.042
FG: 1.008
3.15 lb MO LME
1.2 oz table sugar
0.5 oz Crystal (7.7%) @ 30 min
0.5 oz Crystal (7.7%) @ 10 min
1.0 oz Crystal (7.7%) @ 0 min
1.0 oz Crystal (4.0%) Dry Hop
Wyeast 1272 Yeast Cake
Results:
Similar to brulosophy the predominant flavors I get are lemony and floral which are really enjoyable but one dimensional and begging for something else. I have a feeling that pairing Crystal with another citrus-forward variety like Cascade or Amarillo would make this pale ale really great.
I hope this data point helps others and I'm curious to see what you all think? Does anyone have experience using Crystal hops in pale ales and IPAs?
