I previously made a Ginger and Habanero Red IPA (Souless Ginger Hell). I added 1 pound of ginger at the half way point of the boil, and a pound of habanero in the last 15 minutes. There was a nice flavor of ginger up front, and the burn of the habanero at the end. All in all I was pretty pleased for a first attempt.

I was gifted a double IPA kit, so I want to make a double IPA flavored 3 times with ginger. The kit is 6% abv, and I would like to up it to 8% or 9%, and increase the ginger flavor.

My thought is to add the ginger to the boil at the half way point, add another pound while it ferments, and I was hoping to make a ginger simple syrup to add to the flavor and abv. But I am unsure how much sugar (leaning toward corn sugar so as not to increase sweetness too much) to water I should use for a 8 gallon batch. (8 gallon reduced to 5)

I'm kegging and not bottling if that matters.

The best way to figure this out is to use one of the beer recipe calculators. But
it takes roughly 1.1 pound of sugar to increase ABV by 1% in a 5 gallon batch, assuming 75% attenuation.

So with 75% attenuation, you will need 2.2 - 3.3 pounds of sugar for a 5 gallon batch to go from 6% to 8% or 9% respectively. Of course that's going to do more than just affect ABV%, it's going to affect overall body and dryness of the beer.

You added 1 lb of ginger and 1 lb of habanero. I admit I have never used either of these two in a beer, but my reference frame would be ounces, not lbs. Please provide more details of what you dd.

Simple sugar will ferment 100%; in fact it will ferment more than 100% (apparent attenuation). Simple sugar is often added to dry out a beer. A sugar solution will ferment to below 1.000, so adding sugar will actually result in lowering FG. 1 lb of sugar will increase abv by about 1.3% in a 5 gallon batch.
