Ok, here is a very straight forward Saison recipe that is my second favorite brew to date. The malt bill could probably be reduced a little. I had a fortunate mistake and ended at 1.055 because I over sparged.

This Belle Saison yeast is a monster. If I had a 1.067 OG it would have been a seriously intense beer! As it turned out it was just right. A very drinkable, flavorful 6.7% beer.

How prominent is the munich malt?

I did a simple single malt saison for the Limbo Challenge this year.
It did not win anything but it was definetly an easy drinker. Kept it under 5% abv using that same yeast.

That was tough.
 
Munich didnt really stand out. My next iteration i was planning to bump it up and reduce the wheat to see how it changes.

The Belle Saison contributes a little sweetness it seems, even though it mashed at 149. It had a nice balance with close to 40 IBUs.
