Simple extract Hefeweizen?

So I'm new to home brewing. Latest attempt being ginger beer (eh.. It was iffy smelling, so pitched it out, egg smell). But I decided to bounce back with a hefeweizen. I'm curious if you guys think this recipe will birth a tastey treat for the thanksgiving table this season.

1 oz - German Hallertau pellets

8.5 lbs - Maillard Malts Wheat Malt Extract Syrup (I think it's 65% wheat 35% pale)

Wyeast 3068

Add liquid malt and boil. add hop pellets in bag and boil for 60(just to break some of the sweet out). At 65F pitch yeast right in. Ferment 10 days. Then bottle. Should end up around 5%?

will this be enough to create a sweet, banana-y (I made that up) brew? did I over simplify? Am I missing anything?

The nice thing about hefe beers are their relative simplicity. It looks a little light on the hops. My current bag of hallertau is 2.8% so if your in my boat maybe add another half oz at 30 minutes. If your hops are higher, disregard that.

3068 is one of my top 2 favorite hefe yeasts. I like to under pitch and ferment warmer. I start it at 65 ambient for a couple days and then just let it free rise to wherever it ends up. I have a fridge with temp control though..

I think you're on the right track though.
