What is your favorite style of beer to brew to showcase simcoe hops? Thanks in advance for ideas

I recently made the SMaSH by Norther Brewer and it was a big hit with everyone who tried it. I am going to make it again in a few weeks, but I purchased more Simcoe hops (2 oz) to double the dry hops and add more to the 15 and or 5 minute additions. This way I will get more of the flavor/aroma from the hops. Or maybe I'll add the additional hops at flameout instead or do a whirlpool. Either way this brew had the bitterness right on, just wanted to bring out more of flavor/aroma of what Simcoe has to offer. Good luck!

PS - This is my last extract kit waiting to be brewed. I may look at making this again but going All-grain. Well after all the other brews I want to try to make.

Hope it turns out well for you

I had a nice Simcoe golden ale / special bitter on Friday. Can't remember the brewery but it was good. A bit like an APA but less malty and paler. Nice moderate fruity hop aroma.
