If you want seriousness go elsewhere

:cross: I just finished making a pot of clam chowder and grabbed the wrong beer to dump in it. I planned on using a bright citrus white belgium and used a hoppy ale instead. so do I rack the chowder until the hops bitterness mellows? :drunk:
 
Under normal circumstances I'd say yes however any mellowing of the hops will be offset by stronger flavor and aroma that comes from "conditioning" clams and milk! :eek:
 
Yes by all means rack the chowder to secondary. However, it needs warm temps to keep it from coagulating, so keeping it next to the water heater or furnace is recommended.
 
If you are in a hurry to drink your brew, add more chowder to lessen the bittering effects.

Since the chowder is racked, can you send some jambalya this way?
 
Ooooo I have never made jambalya...... Gonna have to try that though. how long does jambalya take in the secondary?
