I have one just like that. You just pull out the sensor (let the coil uncoil a bit) and place it on the shelf in the fridge. You might need to hang the unit itself a little lower on the side of the fridge, if you don't have enough slack in the coil.

That might not be a very clear explanation. Sorry.
 
Yeah mine's the same too- got it from William's brewing years ago and it's still going strong. Just uncoil the sensor and route it into the fridge somehow and let it dangle in free air towards the back. Be careful not to kink the coil or let the sensor touch the walls. If you wanted to get fancy, you could drill a hole in the back of the fridge instead of running the sensor coil through the doorway, but then you run the risk of hitting a coolant line and ruining your fridge. I would just run it through the doorway on the hinge side and duct tape the coil to the fridge walls to get it out of the way. Also be sure to turn your fridge's thermostat to it's coldest setting.
