I recently acquired som 5/8" OD copper tubing. I want to make an IC but will this be too thick? Should I eBay it and buy some 3/8"?

That'll make an AWESOME IC.
 
Well, the good news is that regular 1/2" copper pipe fittings will fit. What this allows you to do is make a basic coil and then use rigid 1/2" pipe with 90 degree elbows to get your uprights without trying to bend your tubing tightly. The big advantage to using larger tubing like yours is that it will hold its shape really well and not flop around like a spring. I'd suggest making the coil tight around some cylidrical object like a corny keg or fire extinguisher, then pull it apart a bit to put about 1/2 to 1" of space between coils.
